The fruit sourced for our rosé hails from a unique block at our Canary Hill vineyard in the Eola-Amity Hills AVA. The rosé block is equal parts Pommard, 115, and 777 Pinot noir and is shaded by the native Oak trees that flank the East side of the vineyard. The extra shade from the ~100-year-old Oaks allows for extended hang time and complex flavor development, while preserving the fruits natural acidity late into the season. Most roses are typically picked very early in harvest to achieve higher acidity and lower sugar levels, our rosé fruit is handpicked towards the end of harvest due to its unique location. The fruit is hand sorted for quality at the winery, left in contact with the skins until the correct color is achieved and then lightly pressed. From there the wine is barrel fermented and barrel aged in 100% neutral French oak barrels. Throughout the aging process the wine remains with the original yeast, and partially finishes malolactic conversion to add silky textural qualities.
